โซเดียมเมแทไบซัลไฟต์ (sodium metabisulphite) เป็นสารกลุ่มซัลไฟต์ที่ใช้เป็นวัตถุเจือปนอาหาร
มีลักษณะเป็นผงสีขาวหรือออกสีเหลือง ละลายในน้ำได้ (ที่อุณหภูมิ 20°C ละลายได้ 54 กรัม / น้ำ 100 ml ; ที่อุณหภูมิ 100°C ละลายได้ 81.7 กรัม /ต่อน้ำ 100 ml) สารละลายเป็นกรด ละลายได้ในกลีเซอรีน (glycerin) และละลายได้เล็กน้อยในเอทานอล
โซเดียมเมแทไบซัลไฟต์จะสลายตัวเมื่อมีความชื้นสูง เมื่อสัมผัสอากาศจะถูกออกซิไดส์เป็น sodium sulfate และเมื่อสัมผัสกับกรดแก่ จะให้ก๊าซซัลเฟอร์ไดออกไซด์ สลายตัวที่อุณหภูมิ 150°C
