แป้งโปเตโต้ หรือเรียกอีกชื่อว่า แป้งมันฮ่องกง คือสตาร์ชที่ทำจากมันฝรั่ง ไม่มีกลูเตน เป็นแป้งที่มีขนาดเม็ดใหญ่ที่สุด ใหญ่กว่าแป้งสาลี แป้งมันสัมปะหลัง และแป้งข้าวโพดกว่าสองเท่า จึงทำให้เป็นแป้งที่ดูดน้ำได้ดีที่สุด และมีสีใสกว่าแป้งอื่นๆ ไม่มีรสชาติ ใช้ในอาหารที่หลากหลาย เช่น ซุป พาย ซอส สตู ราดหน้า เป็นต้น
